we were wondering how easy it would be for me to find some work on a tourist visa, and how dodgy it is.
Don't risk it. Australian Immigration is very strict on this, and does random checks with likely employers. If found out, you'd be deported, and wouldn't be allowed back in for a number of years.
Finally- can you work in NZ on an Oz working holiday visa?
No. However, New Zealand has its own which is just as easy to obtain as the Australian one, and for UK citizens New Zealand even has a which has eligibility up to age 35, so that might still be an option for you, too.
