Costa Rica perhaps? Very easy to travel around. Otherwise I'd recommend Buenos Aires if you are making it there?
I've pencilled in Buenos Aires for some festival madness, not sure she will appreciate that. Plus I'll be there at the end of my trip and would rather she visited in the middle

Im in Costa Rica right now and it is very small so it's easy to get around and have everything to offer in terms of animals, nature and landscapes in totally different styles. All from hot beaches and cosy towns to higher altitudes with Monteverde and it's cloud forests. Very good country but do not spend time in San José. I would recommend go to Arenal Volcano and the areas around and then Montezuma and the pacific coast
What about Rio for the carnival.
I think the first question is, "where is Mom flying from?"
If she's a poor traveller then start by choosing a destination that's a direct (and preferably non-stop) flight.
