Advice on travelling Asia starting from Australia

Hi, me and my girlfriend are visiting family and friends in Australia in November for about a month then we plan to venture off on our own to travel around Asia for 2 - 3 months (depending on money) come the beginning of December.

Luckily Asia isn't that expensive. So you can get by on less than $10 a day (at least with food). Maybe leave out China and spend most of your time traveling throughout Thailand, Cambodies, Laos, Vietname, etc. (maybe add Singapore? Bali? Fiji?). China's a great place but it's so big and you won't be able to see anything in such a short amount of time.
are you planning on arriving at your destinations and just winging it or are you planning on maybe using travel packages? they tend to take off much of the stress---especially when it comes to traveling in foreign countries
