If you go to the Amtrak website and study the route map, you will see that your travels are quite limited by their sparse service in the West. Passes, if available, will also be discussed on that site.
August/September will be the dry season in the West - I think you should avoid the southern routes for that reason. I suggest the train from Chicago west to the Pacific Northwest via the Glacier National Park. You need reservations for this train well in advance (especially in August/September).

I had a look at their website and think I'm going to go for a 8 stop multi pass.
Sorry for my ignorance but why would I want to avoid the Southern routes?
