Have Rome & Paris, need recommendations for 3rd place?

Planning a trip to Western Europe for early September, and traveling with my wife and our 18 month old daughter (11 days). It's my wife's first trip to Europe, i've been a handful of times. I know, I know, we should have fit Europe in before we had the baby.
We are set on Paris & Rome. We need recommendations for the 3rd spot. Since the first two are big cities, it would be nice to make the 3rd destination a smaller city, less mainstream, slower pace, with good scenery, good cafes and pastries.

Geneva, has to be. The cafes are great, and it's a perfect stopping-off point between Rome and Paris. If you take the train you'll be going through some of the most amazing scenery in Europe. Also, it's relatively easy to get out into the countryside - you can be up in the mountains in about half an hour.

Ljubljana is a favourite of mine, it probably ticks all the boxes of your requirements.

Verona, home to Romeo and Juliet. Fabulous cafes and a better amphitheatre than the coliseum in Rome in my in opinion. The tourist information office in the centre of town is extremely helpful and there are great free mapped walking tours around the city. Not only is it a beautiful historical city in its own right, come on its the home of Romeo and Juliet and a little extra romance after a baby never goes to waste!!

If you want to visit another country, Salzburg, Austria is very quaint and beautiful. As is the Black Forest in Germany. I would say Interlaken in Switzerland. It's absolutely gorgeous, very relaxed and a bit different than major cities. I've also heard great things about Bologna in Italy, but have never been. Best of luck!

Prague, Czech Republic. I loved this place, it is getting a little touristy now but is a good insight into the old iron curtain.

Opportunity for day trips to Csesky Krumlum (old town) which is pretty amazing and you can see most of Prague in a couple of days.

Its like to Paris of the East.
