Does anyone know if there is a particular airport in the Los Angeles area that caters for the budget airlines? I'm looking into booking an onward flight from LA to either Mexico or a Central American destination but can't seem to find any budget airlines that fly out of LAX.
LAX is your only choice. And there are really no "budget airlines" flying to Mexico or Central America. And as far as I know, the only international flights out of the Los Angeles area are from LAX.

Daawon is exactly right--driving across to Tijuana is something I did often when I lived in LA--and I saved a ton of money by doing so.
If you do want to fly on the cheap from the LA area, considering either taking Southwest from LAX, Orange County, Burbank, or Ontario to another city (such as Miami) and then flying onward to South America--or else fly JetBlue out of Long Beach to another city such as Phoenix and on to Central America. Tijuana is my first choice, though--especially i you are flying to other cities in Mexico.
