There are many scheduled flights with European national carriers to all the islands - and there also many coming in with European budget airlines as well.
There also cheap flights websites that have good deals too.
From Germany expect to pay no more than around €80 one way for a flight to the Canaries, although you can find flights a lot cheaper than that if you're prepared to take time out to search for awhile.
Thanks for the info. Flyingbob. Do you know of any specific airlines that go there. I'm checking out a few airline sites right at this second.

I would look at Air Berlin. They have flights to the Canaries from many German airports and quite often have special offers on, for specific dates.
Iberia (Spain's national carrier) also has flights from various German points, but their fares tend to be more expensive usually. Although again, with a bit of patience and being flexible with your dates, you might find a bargain.
Lufthansa (Germany's n.c.) does schedules too - but you'll find that their fares are around the same as with Iberia.
I would suggest looking at www.ltur.de, they have the best deals for flights to beach destinations.
However for the Canary Islands consider booking a normal package holiday, often you get good deals this way. It might be difficult to find a place to stay otherwise. My mother goes to the Canaries every year and she swears by booking last-minute and staying at RIU hotels. (She is very picky, so I really believe her when raves about this hotel chain - the service, the cleanness, the food, just everything. Especially the food.) I think that if you go in off-season you can get yourself a real bargain.
Thanks again Flyingbob and also t_maia. What would be considered their off season? I was thinking about spending a few days over Christmas there or during the break between winter and summer semester (February-April). I have done a bit of info. searching, but I want to know whether it is an expensive place.

I agree with the others - a package will be cheapest since you want to go during the expensive holiday season. Off season would be considerably cheaper. This is Europe's Hawaii.

As Daawgon already wrote- it is Europe's Hawaii. Everything has to be transported there by ship or plane. This makes things expensive. On the other hand ordinary people on the Canary Islands are relatively poor, thus keeping price levels down.
Christmas and July/August are super-high seasons, during Feb-April you should be able to get some bargains if you avoid school holidays.

Essentially it boils down to "avoid Easter".
Expect to pay around 400 EUR for 1 week on the Canaries - package deal, 3-4 stars, breakfast to half-board.
Tips:
1) During Feb you'll most likely want to stay in Germany for the Fastnacht (Mardi Gras) celebreations. Fastnet in Rottweil is very famous and relatively close to your location, take a look at it.

Basel and Cologne as well as Mainz also have significant celebrations.
2) If you want your beach holiday cheap consider flying to Egypt or Morocco instead to the Canary Islands. Prices for flights to these destinations are similar, yet price levels in these countries are much lower. I am reasonably sure you can get a good deal for flights to Egypt over Christmas if you can leave a bit early than usual, say around the 12th or 14th. Flights should be between 150-200 EUR return to Egypt. This is quite a bargain since regular big daddy airline flights are around 400-500 EUR from Frankfurt to Cairo. December is a great time to be in Egypt. Morocco will be better in spring, it can get very cold in the mountains during winter.

July and August are actually low season in the Canary Islands, the warmest Europe is the cheapest are the Canary Islands. Christmas is the most expensive period after Easter. September is maybe the best time to go.
From Germany I would opt for a package (check in www.urlaub.de or www.tui.de) and maybe there are good options in last minute.

Ryanair has several flights Canary Islands - Germany.
They are the cheapest if you book in advance and don't need much luggage.
