Looking for someone who has used a Eurail in the pass to educate me on the specifics of seat reservations, the website and guidebook are very vague and mainly state go talk to someone at the rail station. Something I might have extremely limited time to do when I am attempting to make a connection.
On most regular day trains in Europe, a seat reservation is optional at most.
On most night trains and hi-speed trains (TGV, EURONIGHT, FYRA, EUROSTAR, ICE, AVE, all D-trains etc.), a seat reservation is compulsory. Often, you also pay a surcharge. With most European railway companies, booking a separate seat reservation is not possible online; you have to refer to the ticket counter. It is advisable to do so at smaller stations (shorter queues), and some days in advance. You can make all reservations for a single country at one point; I don't know of any cases where you can only book a seat right before the train leaves.
