In Europe (perhaps all over the world...) december and january tickets are sold at are high season rates.
I checked some sites too, but 665 euro is the lowest price for a return at this moment (dohop.com and skyscanner.nl).
Your not too early, rates will rise the coming weeks....
Rome - Napoli is about 2 hrs by fast trains and 1 hour more on a slower and cheaper train.
At Naples station you can take the Circumvesuviana train to Sorrento (about 1 hr). Don't forget to stop at Pompeii..!!

I suggest that you look for the cheapest ticket (to Naples or Rome and back) and use local transport in Italy to and from
the airport.

The fares are not always necessarily charged at high season rates with every company during December and January.
BA (British Airways) will do you a return flight from Pearson - Rome (via LHR) mid-end December, for just over $CAN900 including tax etc.
This equates to around €675. That's the complete fare - including the change in London, so no messing around with budget connecting fares en-route.
You can also get a return BA flight from Pearson - LHR for $CAN880 and then get a budget flight to just about anywhere in Italy. However, it'll more than likely mean getting to Luton, Gatwick or Stansted to get the budget flight onward. It's a lot of messing about as LHR has an extremely poor rail system for coneections to other airports and in fact, to anywhere in the UK.
Alitalia will do you a direct flight from Pearson - Rome, but it's a bit more expensive.
If you're a little more flexible with your dates, then there are return Alliance fares from Pearson - Rome, via Frankfurt, Vienna, Amsterdam and Zurich for around €630-€650
