You could take some time to explore the city, most of it will probably be covered in your travel books, I'd take the time to walk from Circular Quay over to the Opera House then around to the Harbour Bridge, you can walk across the bridge and up one of the pillars for the view. If you're got the time and money you could do a "bridge climb" which is basically a tour of the upper harbour bridge but is quite expensive.
If you have time you could do a daytrip into the Blue Mountains, catch a train from the city up to Katoomba and then make your way to echo point for views of the 3 sisters and the Katoomba Valley, there are some pics in my album if you're interested.
