Congratulations! With that out of the way, you should check out the Amsterdam guides you can find in the travel guide section of this website, they have a great deal of information.
For local advice in terms of what you should go see, that really depends on what kind of thing you are into.
Museums? Van Gogh Museum and Rijksmuseum.
Relaxing and picnics? Vondelpark and Rembrandt park.
Culture? Walk around the city and breathe it in, explore small alleys. Take a day trip to Brugge and Antwerp.
Things that are illegal elsewhere? Look up smartshops and research beforehand, not all coffeeshop produce is of equal quality.
Also visit Sauna Deco, a strictly nude co-ed Dutch sauna. But it's not the red light district, so don't stare. People are there to relax.

For a great canal cruise go to Boom Chicago on the Leidseplein and sign up for a cruise with the St. Nicolaas Boat Club. The boats they use are small and open so they can go where larger (more touristy) boats cannot fit, you can eat/drink/smoke whatever you want to bring along (lighters can be challenging), and the driver (pilot?) will take you where you'd like to go.
There is a pancake house on the Leidseplein, as well as a Bulldog coffeeshop. My favorite coffeeshops are Homegrown Fantasy, Abraxas, Tweede Kamer, and Stix. -snip-
