Considering going to Europe this Winter. Cities under consideration, in order..
I don't know about this year yet but winter hit Europe hard from mid-November onwards last year. Snow storms with cities cut off, airports closed, etc. It is not the best time to travel.
Keep your options open, check on weather forecasts, and if worse comes to worse, head way down south.
Some places like Cologne has Christmas Markets which run through a good part of December and which are supposed to be very good.
I travelled around Europe a bit last Christmas and the snow was immense in Nuremburg, Prague, and between there and Amsterdam. Most of the trains I caught dealt fine with it despite how dramatic it was. The only trouble I had was getting the train from Amsterdam (which was late) and the Eurostar back to London (which was also late). We were generally lucky but if, like Cyberia says, you keep your options open, you'll be fine.
It's a great time to be in Europe, and I intend to take a trip again this Christmas. I particularly love Prague and Nurmeburg in the winter.
Do not worry too much about snow etc. Last year was the worst it has been for decades, so the chances of it being that bad again are pretty low. The Christmas markets in Prague and the German cities such as Berlin are well worth considering.
Cities are well right through Europe in winter, a beach holiday is clearly not a choice, but there are a small number of places at the seashore where you can still go in winter to view the sea and the harbor. Also the low tourist traffic creates for the year's lowly airfares, most excellent accommodation charges, and there is small risk of everything being reserved up when you reach your destination.
Thanks for the information guys. I may shorten the number of cities I visit, just to be sure to have flexibility. The only cities I am for sure on are Amsterdam, which I'm flying into, Prague for New Years, and Athens which I am flying out of. I plan on going solo if anyone is interested in meeting up let me know

if you're heading from Amsterdam to Prague you should definitely stop over in Berlin since it is only a 4,5 hour train ride to Prague. The city is quite different to summer time, nonetheless there's a good atmosphere and a few lovely christmas markets with yummy food and mulled wine. Also, if you want to keep yourself warm, there are plenty of interesting museums to check out.
