Your route seems pretty good.. Plenty of places in route and in short hops from the mayor cities.. If you're nature guys I'd spend less time in Denmark (and I'm Danish), it's a pretty flat place... A good visit while you're driving from Esbjerg to Copenhagen is Odense - birthplace of Hans Christian Andersen... Depending on your timing (and the ferry's) you can stay overnight or visit in route...
Look of 'Møns Klint' for some impressive Danish nature... And do a quick castle tour in Hillerød and Helsingør (Elsingor) north of Copenhagen.. Hamlet took place at Elsingor Castle..
There's a Ferry from Norway to Frederikshavn in northern Jutland.. I'd suggest you to take that, as it will give you a change to drive down through Denmark.. Visit Skagen as well...
I would swing through Göteborg between Copenhagen and Stockholm...
If you'd like to swim I'd go for some of the Baltic beaches (between Sweden and Denmark) in stead of Norway as the water is warmer...
Don't worry about finding petrol.. There's plenty!! But be aware of price differences.. It's a lot cheaper to use the stations without a connected shop.. But you need a credit card with a PIN...
I'd say all three capitals are worth a visit.. Knowing all three, I'd prefer Copenhagen as a visitor.. For all of them, park at a local station on the outskirts and take the train in.. It's a lot easier and cheaper (parking prices are very high), and the city's centers are walkable..

I would skip Stockholm... It looks a lot like Copenhagen, but it is a looooong drive just to see Stockholm, dont think it is worth the drive.
Think I would visit Olso instead. But beware... Norway is a extreme expencive country compaird to other countries in Europe.
