My boyfriend and I have arrived in London. We're Australians but embarrassingly enough I wasn't as organised as I thought, this resulted in us (apparently) receiving a 3 week 'visa' by the lady at border control. She said we had 3 weeks to leave, which works out perfectly because we want to leave in 3 weeks..... and one day :/ - on our passport she has given us a stamp and has written 6 months and has made no mention of the fact that she gave us only 3 weeks. (she has written no date whatsoever on it, other than '6 months')

I don't think you have much to worry about. If you have a stamp saying leave to enter for 6 months, six months you have. There may be a note on the computer that your original intention was to come for three weeks. In which case - if your intentions change dramatically and you decide to stay for a much longer period, but still within 6 months, - you might be asked in the future to explain the change of plan. There is nothing illegal about this. But if you stay for only a few days longer than three weeks no one would bother.

So don't worry about overstaying - you are fine for six months. However if you overstay your six months by more than 28 days, then you would be banned from the UK for 12 months after.
