Non-package family holiday on a budget?

So although we have two small trips with just me and my partner planned next year we haven't managed to decide on a big 'family holiday' yet. Obviously my daughter [just turned three] will be coming with us. I'm pretty keen for her to experience a bit more than standard package holidays [which I cant imagine would even remotely keep her entertained anyway] but at the same time we're on a pretty tight budget [probably around £1000 for the whole thing but could go slightly over].
We've got absolutely no clue what to do so I'm just looking for suggestions.
Any places / trips/ adventures that would be interesting enough to the little one entertained?

Did you consider hostelling?

Decide on an area you like to explore and then pick a hostel that suits you. Most YHA hostels provide full catering service but also have self-catering facilities.
There will be enough information available on how to spend your time, so you don't have to plan too much in advance.
But the best thing is that your daughter will find quite a few playmates and the kids are quite safe to explore the hostel and grounds even on their own.

Have you thought about renting a house on a Croatian Island? You can easily manage that plus flights for your proposed budget.
First thing to do is check which airport in Croatia your local airport flies to, then, get a map of Croatia and find which islands are closet to your point of arrival. If you do an internet search you'll easily manage to find something really nice. The islands vary in size from unihabited to busy party places like Hvar.
When you get the information about the airport feel free to send me a personal mail and I'll be more than happy to give you my recommendations about best places to go.
I can even include some websites etc, which I don't usually like to do on the open forum.

Ever considered driving to the South of France and caravanning/camping? Friends of ours did that as a budget trip abroad with their young kids and the dog, and they spent 2 weeks exploring different little places, setting up camp by a beach and fishing for their tea! The thought of a family road trip intrigues me...
