When it comes to accommodations- the earlier you book, the better. When it comes to any major city, for New Years, it's going to be a booking fiasco.
I wouldn't give up just yet to try to find a place to stay for Sydney. Aside from major hotels, and toward the bottom of that ladder - the smaller less known hotels, I would say to try to look for hostels. Many backpackers change their minds at the last minute, regarding a destination, and might cancel their reservation.
Then, there are other options if you're up to it. Such as couch surfing, B&B's, a short term rental apartment/flat, and then there's CraigsList.
If all that doesn't pan out for ya, THEN I'd start looking at changing locations to Melbourne. Whatever suits your goals.
