This might not be an idea that you originally thought of but how about going to Cape Town for 4 days and then a 3 day safari in the Kruger National Park? Being in the bush is an experience of a lifetime. Cape Town doesnt have cyclones or any of that extreme weather. December is summer in South Africa so the beaches will be awesome!

Idea is awesome, but would totally blow the budget....and we do have a trip planned for next year to SA.

I'm a little unclear on how long you plan to be away? If you're thinking only a few days around his b'day, then your budget is generous. If a bit longer, then it will be slightly trickier, but still - anywhere in Asia would be manageable.
My choice would be Japan. Airfares can be had for around $1200 pp, leaving $800 per person. That $1600 that's left could cover 2 weeks accommodation in Japan without too much trouble.
Only major extra cost would be train travel around the country. But then, I could think of worse things than settling into Kyoto or Tokyo for 2 weeks
Obviously, not a *warm* destination like the other ones you have mentioned, but definitely should be a memorable one!
I don't think I would like the winter weather, love Japan in spring. Sorry to be difficult I am from Finland and if the destination would be winter one would probably head home....
Fair enough if you're not up for the cold. I'm sure any of the South East Asia places you mentioned would work great for the price though. Money would go a lot further too in SEA. I haven't been, but Vietnam seems to be a popular pick of the moment.
Hamilton Island could always be a good option? It is still in Australia but they have some absolutely stunning resorts. Plus, you wouldn't have to travel for hours on hours for only a few days.
Qualia is a great resort there - plus I believe they have just opened a new spa/resort there too.
