If you want to avoid touristy spots, definitely don't go to Vang Vieng. It's the ultimate touristy spot in Laos. Instead I suggest Vientiane and Luang Prabang. These two are much more laid back from what I've read. I'll be visiting at the end of March for a week and spending about 3-4 days in each city before flying to Bangkok. Definitely check out travelfish.org to get an idea of the cities and what you can expect to see in each place. It's been very helpful with my research.
