You get them from the websites of the respective departments of immigration. Assuming you're 30 years old or younger, you'll want to Working Holiday Visa:

You can apply for such visas for up to a year before actually travelling there (they're usually granted within a day; a week at most, so no need to apply very early, other than when dodging the "turning 31" barrier), and they'll allow you to stay in the country for up to a year after arriving. (New Zealand has a 2 year option for UK citizens that requires a medical exam, and Australia has a 2nd year option if you do 3 months of "specified work" (mining, harvest, etc))

If you don't intend to work, Australia allows you to stay in the country for three months on an (apply for free before arriving), while New Zealand allows UK citizens to just show up and stay for six months.
