What time of year are you proposing to go ? This makes a huge difference when looking at costs and availability.........
A few weeks ago we were in Florence and stayed in Hotel Bretagna for about €40 for a double room ensuite excluding breakfast, normally it is double that price but by taking the change and only booking that mornng on line we got a good deal on line using booking.com ..............the hotel itself is on the main river, within walking distance of the bus station and main sites........ when I check it on line dpending on the notice period you can still get a room now during the Christmas season for €60-70........
Both Florence and Venice are MUCH more expensive than Rome.
For Florence, try to find something outside the city center. For Venice, try Mestre (mainland Venice): much cheaper than the actual city, while very close to it.
Try venere.com if you haven't done so already. They have a nice interactive map that shows you where the prime locations are and what prices are to be expected in certain areas within Florence and Venice respectively.
When we were in Venice, ironically, luckily, amazingly, when we chose the main section of Venice (most expensive area), out of all the 200+ prices we found one that was 70. We booked it and crossed our fingers. When we arrive there, although it wasn't a mistake, it was a last minute drop by someone and they sold the room but since it wasn't ready by the time we arrived we were upgraded to a larger room (almost suite like).
We definitely lucked out HUGE! We stayed in Venice (the main area, awesome location) for 70 euros for 5 days.
I would surf and keep surfing that site, you usually will stumble upon something last minute.

If all else fails, rule of thumb is stick to the outside of the main city center. Problem with that is there could be a lot of walking. Not bad and usually a pleasant scenic walk. Then again, you technically walk everywhere in Italy.
There's a wonderful gem of a hotel near Venice that we LOVE! It's on the island of Murano, so you need to purchase a vaparretto pass for transportation. The place is Locanda Conterie. We were there in April and it was something like 60 Euros. The place is actually as nice as their website makes them appear www.locandaconterie.com. For Florence, you might want to consider a short-term rental (as short as 2-3 nights) apartment. I recommend www.florencehousing.it. We've used them twice, always dealt with Lorenzo, and we've found great service, wonderful accommodations, and fantastic prices from them both times. Florence and Venice are my two favorite cities so I know you'll have a great time!
My only thing about spending time on another island as opposed to venice in itself is that part of the charm in Venice is walking around and getting lost in Venice. Day or night. AT night, it is very romantic and hard to explain but brings a charm that is just amazing.
Of course you can still experience this but will have at some point in the evening having to take that 10/15/30 minute ferry, water taxi ride back to your accommodation where, you can get completely lost and still be within walking distance of your accommodations, of course you may be lost but extremely fun.
Either way, just to keep in mind.
