In answer to your question, it is my experience that you are best to book a car on the internet before leaving home. You will get a better deal.
A lot of people that i know have used AutoReisen Car Hire The link for them is http://www.arcarhire.com/car-hire/car-hire.php.
You can book them at the airport, but it will cost you a lot more money. You should have no problem with availability later this month.

Hiring at the airport will be the expensive option: it's too late to shop around. There are lots of websites where you can book in advance, and that gives you all the time in the world to compare prices and all the other important factors. You don't have to pay until you pick up the car. At least you don't if you book here: -snip-.

To be able to visit the small towns and beaches in Lanzarote it is essential to hire a car. It is best to weigh up the number of travellers and the number of cases you have, although the cases would probably only be in the car to and from the airport.
