The day trip is fine, I left Rome on the train at about 7ish to Naples, then transferred to the local train to Pompeii and arrived about lunchtime. The local train was within the same train station and seemed to run regularly.

This gave me many hours at the site and enough time to get back to Rome by night time.

Yes, I've done this day trip too and it does work out fine. Make sure you get fast trains between Rome and Naples.

You could do it in one day, but Naples is a nice city. Also, if you made a multiple-day trip, you could include Ercolano/Hercolaneum and Villa Hadriana, both of which are very worthwhile.

Yes you could, but prepared for it to be a relatively long day. Taking the fast ES or ES* train between Rome and Naples can save some travelling time (nearly 2 hours each way, in comparison to the slow R regional train) but it comes with a price so you should book the ticket in advance in order to avail of discounted train tickets. You could be looking at some €60-€70 per person for the train tickets.

A compromise would be the IC train which still save some 45 minutes in terms of travelling time compared to R train, but ticket price would be around €30 per person for return journey.

You'll then need to buy separate train tickets for Pompeii, which journey time from Naples is about half an hour and should be at most costing no more than €5-€6 for return journey. Don't buy this train ticket together with the Rome-Naples leg, as it would means including R train onto your itinerary and therefore the advance purchase discount will not be available.

You can also alternatively look into guided tour from Rome, which will save you the hassle of organising for transportations, food and tour separately. This will come with a price though, e.g. approximately €100 for transfer to/fro Rome and Pompeii, guide, entrance and lunch.
