Look at the Schengen area as one country. Inside the Schengen Area it is 90 days max within a 180 day period starting from date of first entry. Time spent outside the Schengen Area doesn't count. It is completely irrelevant where you spent additional time during your trip: Ukraine, Ireland, Egypt, Morocco, Japan, China, Mexico - it does not matter as long as it is outside the Schengen Area.
Note: if you have a layover in say Amsterdam the day you spent inside the airport might count towards your stay inside Schengen. Depends upon whether you leave the transit area and get stamped into Schengen during your layover in Amsterdam.
My advice to you is that you contact the Home Office ( Immigration, visas and naturalisation office in the UK), where you can get all the information you need. Visit the website for the Home office, where you can get all the contact nos.

The main question I have is are the 90 days consecutive?
For example, you enter a European country in the Schengen Zone on Jan1. IS the absolute longest I could stay in Europe April 1?
Or
Enter a European country in the Schengen Zone on Jan1, travel to a few countries outside of the zone like England and Turkey for a few days. Will this allow me to extend stay and only count actual days spent inside the zone or do I still need to be back in U.S by April 1?

No, the 90 days are not consecutive. That is what the 90/180 rule is all about. 90 days is just the longest consecutive stay that you are allowed.

YES.
Time spent outside Schengen does not count. You can spent several years in Europe travelling all over without breaking the Schengen rules as long as you stay within the 90-days-in-a-180-day-period rule.
US citizens can stay visa-free in the UK for up to 6 months, many people base themselves in the UK and make extended trips to the Schengen area. One month inside Schengen, 1 week in the UK, 2 weeks inside Schengen, 3 months in the UK, etc, always going back and forth. Theoretically you can keep doing this for several years, the only problem is the UK immigration authorities drawing a line on how long they allow you to enter as a tourist when it is clear from the time you are there that you practically live in the UK.
The 90/180 day rule exists for the following reason: If you spend 91+ days in a 180 day period inside the Schengen Area you have spent more than 50 % of your time in half a fiscal year inside the Schengen Area. Your focal point of life is judged to be inside the Schengen area for this half of the fiscal year, thus you are considered a resident subject to taxes. As a result you are required to have a residency permit.
Also you count the exact days, so if you entered on say, June 1st it would be too late if you left on Sept 1st. If you enter on June 1st you have to leave on Aug 28th at the very latest.
I sugggest you post your date of entry and some more information about your travel plans. When do you plan to leave, what countries do you intend to visit, that sort of info.

I made this assuming I had 90 days total to use. I would like to go to Zermatt for 3 days and Istanbul for 3 or 4 days as well (outside Schengen Zone). Based on this information, Dubilin, Edinburgh, and London DO NOT count towards my stay. Therefor I would have 11 extra days before I hit my maximum stay.
How are European Customs supposed to know this on my return since my passport isnt stamped at every location? What proof can I show them that I did not stay over 90 days in the Schengen Zone?

Please look into your passport. You should have an entry stamp either dated 03rd (Amsterdam) or 4th (Lisbon). The date that is on that entry stamp is the one that counts.
Time inside Schengen
03rd Jan to 23rd Jan - 21 days
04th Feb to 03rd Apr - 59 days
Total: 80 days.
Thus you still have 10 days inside Schengen until July 1st.
I would like to go to Zermatt for 3 days and Istanbul for 3 or 4 days as well (outside Schengen Zone).
Zermatt is in Switzerland, any stay in Zermatt will count towards your allotted 90 days inside Schengen.

When you leave and enter the Schengen area it is your job to make sure that your passport gets stamped. Check your passport - do you have an exit stamp for the Schengen area dated Jan 23rd, when you flew from Barcelona to Dublin? And and entry stamp dated Feb 4th when you went from London to Paris?
What proof can I show them that I did not stay over 90 days in the Schengen Zone?
Train and flight tickets as well as other reciepts that prove where you have been. If you have a reciept stating that you bought a sandwich in London on Feb 3rd you cannot have been inside Schengen on that day.

Although, this is a topic I wanted to be absolutely clear about since I want to stay longer in Europe. So please help me out if you can, Thank You!

My main questions are these:
1) Did my time spent in Morocco restart my 90 day Visa in Germany (and EU/Shengen) upon returning to Germany? Or did it add the same amount of days I spent in Morocco onto my 90 day Visa in Germany (giving me 10 extra days)? Or neither and my end date is the original 90 day period from the first day I arrived in Germany?
2) What countries can I go to in Europe after my 90 days are up, or to extend my 90 days, that are outside a Shengen country as of October 2010?
If any of these are no longer outside Shengen please let me know: Ireland, Scotland, England, Switzerland, Croatia,(<----mainly these) Bosnia, Serbia, Montenegro, Macedonia, Albania, Ukraine, etc.
3) Artist Visa (self employment visa). Can I get while I am already in Germany? and can I get it, or at least be accredited with it, within 2 weeks?

back story:
Arrived in Germany with passport stamped on August 11 (inside Shengen). Here on 'automatic' US citizen tourist Visa.
I went to Morocco for 10 days
(passport stamped leaving Germany and arriving Morocco September 19, and stamped leaving Morocco and arriving Germany September 30)
...i want to stay longer, what are my options
