You use your ATM card as you would do at home. Inform your bank where you are going (and I do not just mean 'Europe') and receive acknowledgement from your bank.
Take a credit card for back up in case of loss of your ATM card, similarly inform the finance house where you are going.
How much money you carry depends on how much of a spendthrift you are, but I carry two days spends. ATMs are everywhere you are likely to go.

I'm with WomBatt. I just use my ATM card when travelling (the pin solution works in a ton of stores abroad now as well), and have a credit card as a backup. CC should not be AMEX in that case, as those are hit and miss in terms of acceptance (primarily due to the high fees AMEX charges shops).

.....and as B. of A. sorry I forgot - if you do not have have a four number pin , ensure you do!

-snip- Get a travel card to take money out whilst abroad. Definitely invest in a travel card as it is a safer and the most efficient option rather than carrying loose change. Depends how long you are going for as well. It will be good to carry money when you first arrive, just to pay for the transport and your first meals, but once you get into it the card is a better option
