Obviously you can't get a good overview of Europe in 9 days, but visiting two cities (either in the same, or in different countries) in such an amount of time is quite doable (flying or training between them, depending on distance), and should give you a decent impression of what they're like.
Do be aware that winter is generally a pretty miserable time of the year to visit Europe (cold and grey), and that daylight hours will be short. Because of that, I'd recommend not going to London; cities like Rome, Florence, or maybe Barcelona would be more likely to be at least pleasant to walk around, even if the weather is unlikely to be really nice.

Since I have to apply my annual leave with the public holidays to getting the longest holidays…
If I changed the traveling date to Easter holiday would be better?
(I think that most of the shop will be close since Easter?)

I am still looking for the cheapest air ticket from Hong Kong to Europe; it will be fine for me if Apr 2011 would be better …

At the mean time, I can try my best to have more saving…

I heard before , someone said French and Italian are not willing to speak English, is it hard to having a communication with them? Let say, ask the information when I got lost?! (It is most probably to be happened…I lost myself in Hong Kong always….)

Around Easter is a wonderful time of the year to be in Europe for. Here in the Netherlands, for example, the flowerfields will be in full bloom. I'd avoid Rome, since it's an absolute madhouse due to the religious nature of Easter, but any other city should be fine. It's true that in many (?) countries stores will be closed on Easter Monday (and as always on Sunday), but I think you can plan around that.

The amount of people who speak English in France and Italy isn't as high as it is in northern European countries (e.g. Scandinavia, Germany, Netherlands), but unwillingness to speak English is in my experience more myth than reality, and then mostly based on adversity toward Americans/Brittish - I really doubt you'd have any problem because of it, particularly if you learn to say "thank you" (merci beaucoup) and/or "Do you speak English?" (Parlez vous Anglais?) in the local language, to show that you're at least making an effort. (No idea what either is in Italian, but a lonely planet or google translate should be able to tell you.)
