We stayed at the Menzies in Sydney's CBD. Fairly standard, a little worn, but smack bang central and ten minutes walk from the Opera House, so excellent location.
A little further out, the Waldorf Metro Suites were good - you can walk in (25 mins) or jump on the train straight to circular quay.
I'd recomment Nelson Bay in Port Stephen, although it's an hour or so diversion off the main Route 1 I think, but a nice little place. Coffs Harbour didn't have much to see except the Big Banana.
If time or weather are limited, I'd press on to Sydney.

I agree, Nelson Bay is a nice little area to relax for a day or two and if you're only staying in Sydney for a couple of days then you'll need to stay somewhere in the CBD.
