We are going to fly into San Jose, maybe spend a night there and head off to the beaches. We love surfing, eating and wildlife

There are 2 surfing centers worthwhile visiting in Costa Rica: 1. Playa Tamarindo on the Pacific coast (4 hours by car from San Jose) and 2. Puerto Viejo de Talamanca on the Caribbean side of the country (3 hours drive from San Jose).
I recommend visiting both locations. The areas are quite different from each other, offer various interesting spots to visit nearby, both have full range of accommodations to choose from, and concentrate all services which one could expect. You don't have to stay in the center of these small towns to enjoy the areas, and one week in each location will give plenty of opportunities for discovering the country's attractions in a relaxing way. Here it is called Pura Vida, take it easy, enjoy!

If you're going for food prepare to be disappointed-food in Costa Rica is execrable.

We stayed close to Volcano Arenal at a place called surf chalets and had a lot of fun. Besides the volcano and the lake also the landscape around the lake, including Monteverde and Rio Celeste is fantastic. Absolutely worth to see, to stay and to enjoy.

food in Costa Rica is execrable.

Now, now!
If this relates to budget limitations, you obviously did not check out the trailers' digs! Better and cheaper than McDonalds and certainly not execrable.
Otherwise you could have had fine culinary experiences, particularly in the Central Valley and in the larger resorts.
