Summer work is difficult to find in the current economic climate, not just in Amsterdam.

Which languages do you speak?
The better your knowledge of the local language, the higher your chances of finding work. You'll be competing against local students who are also looking for a job for the summer.

Check out the Irish pubs in the bigger cities on the continent, contact them and ask.
What are you studying? Any chance you can contact companies within your study area for a paid work experience or a summer job?
