Hi there, I strongly recommend you visit a region called Setúbal located between Lisbon (South) and the Algarve. It has stunning natural beauty, both green and blue. Km's of white sandy beaches, the Arrábida mountain that will soon be considered world heritage and where you can do many outdoor activities. You also have plenty to do here like dolphin watching in the wild, scuba diving, golf, walking tours, or just simply stay on the beach! You can also enjoy in the region the wonderful Portuguese cuisine and do wine and gourmet cheese tasting visits. -snip-

Although I must agree that Arrabida and Setubal region are indeed a great option (how couldn't I agree, since I live there!), I would also recommend the following places:

-> Évora (an old city, famous for it's roman temple)
-> Tomar, Alcobaça, Batalha: the all three are Unesco Site Heritage, they are quite close (if you have a car) and quite nice to visit
-> Coimbra (the "university" city which has also nearby a great ancient roman city)

And finally, my favourite area (and also for a lot of Portuguese), the Minho area:
-> Braga (an old city which were ruled only byt archebishops)
-> Vila Nova da Cerveira (a small town with one of the best bird eye's view in Portugal)
-> Viana do Castelo (a nice city with another great bird eye's view in Portugal)
-> Gerês National Park (the only National Park in Portugal, with old roman roads, waterfalls, dams, mountains, forests, small little and rustic villages)
-> Ponte de Lima (an interesting town, the oldest in Portugal)
