As for Venezuela, I can tell you that you cannot Legaly do that unless you want to deal with the paperwork first and all that . Thing is that may take you a month or so since all those kinds of things here take really long time.

So it will be possible to officially register the car in someone else's name in Venezuela provided we have the time/patience to do all the paperwork? or is it just possible to allow someone else permission to drive the car but it would still be officially in my name?

You do not need a permission to drive anybody's car here. the only paperwork you DO need is in the case you bring a car from the outside and try to sell it in Venezuela.
No, I have never brought a car from the outside and tried to sell it here, but I do know that you have to pay a bunch of fees and go through the process of legalization. dont really know where that process takes place, sorry.
