well.. you can have a sunset cruise in Manila Bay... just head to the Cultural Center of the Philippines (CCP) Complex and there are ferries that offer the sunset cruise with dinner.
Yes Wensha is a good place for Spas I heard though I have not tried it. Within Makati, you can also try The Spa in Greenbelt Mall within Ayala Center which is just about 10minute taxi ride from Burgos St.
Visit of course Intramuros and Rizal Park in Manila, you can also drop by the Manila Ocean Park.
Well.. you can also hire a car to get you to Tagaytay City which is a city perched on a plateau that offers the view of the Taal Lake and Volcano... though the volcano is currently in 2nd level alert due to signs of erupting, still Tagaytay is at a safe distance.
In Laguna, you can try rafting to the Pagsanjan Falls or swim through the cool springs of the Hidden Valley or to the town of Liliw and Majayjay.
From Manila, you can also explore Subic which is up north where there are good beaches and nature encounter parks. Down south, Batangas has beautiful beaches as well..
Manila and the Philippines is generally safe so you need not worry and you'd certainly have fun here with the people and the culture...

I live in Korea and have spent a lot of time in the Philippines so hopefully I can help a bit. There is a really great place in seoul called SeoulWise which is very cheap and THE most friendly place you will ever stay at. It is a very small hostel but it has a private double room and a rooftop area and also a TV room and free coffee, TV etc etc and free breakfast. OK so it is not a hotel but the rooms are the same as any hotel and it is very small so it is not noisy like a hostel. It kind of is the best of both...very cheap, incredibly friendly but also quiet and in a lovely neighbourhood of Seoul.
Also Korea is very cheap, where did you see that it is expensive? A very good meal for 2 people will cost about 8 or 10 dollars in most restaurants or about 6 dollars if you know the good places!
Also when you get off the plane get the bus from Incheon to Seoul. The buses are very fast, cheap and luxurious! They are located right outside the terminal. Just ask at an information desk when you get there, it's really very easy
As for Manila, you are paying for a high end hotel, we normally go cheap end and pay about 10 dollars US per night, or cheaper. Don't worry about being in a red light district, it doesn't mean it is necessarily more dangerous or bad. To be honest, if you are staying in the Philippines for a week I would not stay in Manila for the duration. It is very hot and sweaty and there are so many beautiful, clean beaches not far away. My advice is to head for the beach!

Just noticed you will be in Korea in the winter. Vegas and the Philippines wil be very hot but Korea will be VERY cold at that time of year. Freezing cold in fact. Possibly there will be snow. Just thought I would mention that so you can pack accordingly!

@bwiian... correction.. heehhe.. December time in Manila will be cooler than it is now as usually the cool winds start blowing November until February... specially if he will be in the Laguna or Batangas area... it will start to be chilly that time because of the higher altitude of those provinces.. but of cource Korea would definitely be chillier
Well from Biñan.. you'd be not that far from Tagaytay... take time to have a spa in the garden restaurants there like Sonya's Garden, Nurture Spa.. they're good.. :D
On new years eve.. I'd say drop by the Mall of Asia.. as there usually a lot of fireworks over the bay during New Year.. or you might be able to catch the annual Pyrolympics there..
