Sounds like Hoi An (Danang airport) would be ideal for you since it has a great beach and plenty of culture nearby too. I doubt if you'll find any beach huts there, but in town there's plenty of cheap/nice rooms for very little.
You might also check out Phu Quoc Island - better chance of a (pricey) beach hut there.

There are day and overnight buses to Mui Ne. They have rooms very close to the beach, $12 for an a/c room, $8 fan room. Mui Ne also has some very interesting sand dunes very close to town. covers my day in Mui Ne. Or overnight bus to . Good beach, bay tour, lively nightlife.
