You could start by driving the west coast of France and the north coast of Spain, until reach the Atlantic coast of Portugal. You'll find some of the most beautiful beaches of Europe with huge waves to be surfed in these three western countries. My preference goes to Portugal, especially the area in the northwest of Lisbon with beaches well known by surfers from all around the world. Some exemples are Ericeira, Peniche, Nazaré.

Then you could drive from the south of Portugal through the southern coast of Spain to reach one of the most interesting cities in Europe: Barcelona. From there you can easily go to Andorra, a small country in the Pyrenees where you'll get the chance to do snowboard. Crossing the south of France where you'll find the Cote d'Azur with many beautiful places to stop at, you can enter the Alps and do some mountaneeiring and visit some beautiful gorges either in France, Switzerland, Italy or Austria.
My preference here goes to Switzerland. Zermatt and the Matterhorn in the Valais, and also Interlaken and the Jungfrau in the middle of the country are two magical places to explore mountains and valleys. The region of the Grisons with St. Moritz is also breathtaking. The only problem with Switzerland is that everything is so expensive, so if you are travelling on a budget you'd rather go to Vale d'Aosta in Italy or Chamonix in France. All these places are perfect for snowboard as well.

Slovenia, Croatia and Montenegro offer some really beautiful beaches (and islands, for Croatia) and they are incredible green countries where you'll find many places to do some hiking and to swim.

I don't know if you are into cities or not but Paris, Lisbon, Barcelona, Florence, Venice, Ljubljana, Dubrovnik, Budapest, Prague, Kraków, Berlin, Amsterdam are all worth a visit.
Another interesting country can be Greece, where you'll find all sort of islands and some nice places to visit in the mainland as well.

I would definitely recommend you to use the national roads instead of the highways. You'll see a lot more from each country and you'll save a lot of money not paying the tolls.
