Take a taxi/bus when going to Cancun, but get a car once you decide to travel to Playa del Carmen.
Eat at La Habichuela (downtown Cancun) and be sure to take the ferry across to Isla Mujeres and visit the turtle sanctuary there.
Also, I agree that the swimming with the dolphins is fun, and traveling to the amusement parks are great, but I'd also take the time to visit all the small beaches (and some of the "pop up" bars) over on Cozumel. Easy to get lost (if you want and find fairly secluded, and fun, places.
P.S. Get an indoor table at La Habichuela--if it is too hot sometimes there are a few bugs out in the courtyard despite how gorgeous it appears out there.
