I visited Victoria with my gf last year, and loved it too. Another recent favorite of ours is Ronda, Spain. It's a town at the very edge of a highland plateau, with a gorgeous view down the cliffs. Amazing restaurants (we might've been really lucky, but everywhere we ate, the good was superb), and it's really easy to descend the cliffs and start hiking through the rolling hills of the landscape below you (quiet farmland, with olive tree orchards and small babbling brooks). For other activities, there's an old Roman town nearby, as well as an cave with some 30,000 years old cave paintings. It reportedly gets very touristy in summer, but if you visit in winter, temperatures are still great during the day, and it's much less crowded. (If you combine it with any other city, I'd recommend Sevilla.)
I visited Ghent, Belgium, recently with my partner and we thought it was absolutely lovely. Lots of fantastic restaurants, cafes and bars, and compact enough to cover on foot.
