Most of southern Europe will probably be hot in July, and even hotter in August. Accommodation in these places will often have air conditioning (you may have to pay extra in some places). Greece can be 40.C down south and the past few years, some nuts have lit forest fires which does not help.
Anywhere with a beach will be crowded in July, especially Spain. Italy you can have to pay to use a (crowded) beach. You will have to book up something very soon, with air conditioning. July I don't think is too bad on the Costa del Sol. I've certainly had a lot worse. Check out lowcostholidays for a bargain.
What ever accommodation you pick, check on reviews on it (type name of accommodation and reviews into a search engine) to see if it is NOISY at night.
The north of Spain, including Costa Verde, Picos de Europa and valleys of Liebana, is much cooler than the south. The rugged coast line has beautiful coves with sandy beaches and hardly any people. Especially on the west coast of Asturias, you can visit every day a different beach, if you stay only one month. Some of them can be accessed only on foot. Lovely walks along the cliffs to these beaches is one of the attractions of Costa Verde.
One charming place to stay is Puerto de Vega, a small fishing village with lovely walks to the beaches of Frexulfe and Barayo.

Looks like we have moved the trip ahead to august (another overcrowded month, i know!) and mostly Italy.
The weather will be good in the whole of Spain during July/August. Generally, the hottest city in Spain during the summer months is Seville, where it regularly gets up into the high 30's. Marbella, Malaga and other coastal regions are usually a little cooler - but not by much. Barcelona and the Costa Brava is always cooler than Southern Spain, but as soon as you go inland and away from the Pyrenees, it starts heating up again.
Tuscany, very warm, but usually not such high temperatures as Southern Spain.
Greece is always scorching in the summer months. Don't be swayed by what you've heard regarding it being too crowded though. Yes, Athens and Thessaloniki are big places and always crowded - plus of course Athens is one of the biggest tourist attractions in the world. It's also a very big city with choking traffic. But once you're out in the Greek countrside - and there's lots of it, it's lovely and quiet and one of the slowest places of life you'll ever witness.
