I think , Vietnam is the best country in Asean that you should visit beacause it has all thing you need :
1. World natural heritage of Ha Long bay ( cruising, kayaking, swimming.....)
2 . Hanoi Capital is an ancient city with more than 1000 years old
3. Adventure ( biking, trekking) in the North....

My number one country in SEA is ... the Philippines, but since you're already going there I would recommend Cambodia (because you only have three weeks for two countries).
Cambodia has everything from pristine beaches over cultural highlights to nature and lovely people in one small country!
North Korea
I think Singapore is a beautiful country for a visit. Underwater world, night safari, islands, landmarks.. every thing is stunning. I think it is the country which attracts you to itself.
For me, my favorite country for food would be Thailand, for general travel and wonderful people it would be Vietnam, and for efficiency and cleanliness it would be South Korea. (South Korea also has the best international airlines - Asiana Airlines and Korean Airlines.)

Japan. I'm a big fan of Anime and Japanese culture. I also find their history very interesting.

My boyfriend and I are planning a three week trip over Christmas/New Years. We're definitely visiting the Philippines (he has family there) but would like to visit a second country that is nearby.
Just FYI:
1. Three weeks isn't enough to see the most important things in the Philippines, it isn't enough to see the nicest spots of a single island.... You're loosing for every change of your location a full day, why do you want to do that in only three weeks?
2. Are you aware that X-mas and new year are the worst time to go to Asia? The number of tourists tripple and the costs double during that time. It is even hard to find a room sometimes.
3. Indonesia has a lot of rain in December.
