Which USA airport are you flying out of and what airlines have you looked at?
I can probably work something out for you cheaper than what you've found so far.

Right now i am pricing flights out of CHS (Charleston SC)--airport is about 10 miles from my house! i have also punched in CLT (Charlotte NC), MYB (Myrtle Beach) and ATL. I havent really noticed a huge savings, and then the problem becomes getting someone to drive me and drop me off & pick up....with the exception of MYB, the other 2 are both 4-5 hour --one way-- drives. Unless i was getting like a $300 discount, i couldnt imagine asking someone to drive 8-10 hours as a favor!
Right now i am finding the flights leaving CHS into and out of Belfast/Dublin/Shannon airports are running anywhere from $660-$710. I prefer Delta,since i have miles w/them, but even though they told me they operate out of Shannon, the Delta website gives an error message when you plug SNN into an arrival or departure. So...... i guess for this trip, i will fly whoever/whatever combo can get me there as cheaply as possible. I am looking at dates of March 10-24, +/- a day either side, a little flexibility there.

I'll prob message you with the answer as it'll get a bit messy in places and others might bombard the post with alternatives. They can all have a shout (I love flight questions as I fly all over the world on some weird point to point destinations) and I'll get it started tomorrow. It's 21:30 here now and I need to be up at 4am for long day.

Hmm tough one. The best itinerary really depends on how many days you have and what type of holiday you want, is it outdoors, history, culture or night life you wanted? Cos we have it all!
Belfast is just over 2 hrs from Dublin and lots of connections by bus or train. Cheapest is the bus, the air coach is only €14 http://www.aircoach.ie/aircoach.fares.php and then you can get the airlink from the airport into dublin city. So you will save yourself some money, but seems a shame to be in Belfast and go straight to Dublin. So I'd suggest staying a night it's a very different city to Dublin, lots of history and maybe even do a day trip to the giants causeway.
Have you considered hiring a car? It's probably the easiest way of getting around ireland that way you can stop wherever you want. Alternatively you could get some of the paddywagon tours from dublin not sure if you might get a deal if they leave you in Killarney so you can head on to Dingle.
I'm from Carlow myself which is close to Kilkenny and while Kilkenny is a great city, if you are stuck for time I'd suggest just an afternoon or one night there and spend most of your time in Clare, Cork, Kerry and Galway if you get some time.
This site www.Bedandbreakfastworld.com has lots of B&Bs in Ireland, a great way to hear about the area with the local knowledge of the owners.

From Belfast to Dublin you can take the train or the bus, both are pretty fast and the bus would be the cheapest option.
From Dublin to Dingle you will have to go by bus, it will cost you 25.70 and it will take to six hours since you will have to go from Dublin to Limerick, Limerick to Tralee and Tralee to Dingle.
Another option would be flying from Belfast or Dublin to Cork with Ryanair, it will be faster and might be cheaper.
