I'm going to be in Australia December 25th to January 13th. I'll be mostly in Melbourne, but I have a few days in Gold Coast as well.
Grampians National Park is worth a visit for hiking; usually done on the loop back to Melbourne after the Great Ocean Road (12 apostles). Philip Island might be worth a visit, too, or Wilson's Promontory for more hiking.
is the only airline flying on Ayers Rock airport, direct from Sydney, Cairns, Perth and Alice Springs iirc. The prices usually aren't too outrageous (and doing it from a city like Melbourne with a regular connection to Sydney usually costs you nothing more than another $20 plus the extra time for the second flight), and then you can just rent a car there for two days before flying back again. (Two days is all you need; one to see Uluru, one to see Kata Tjuta. You could even do it in 24 hours (all flights arrive and leave 'around' noon iirc), though that's rushing quite a bit.)
