In the last decade, the Canary Islands and if the police catch you camping where you are not supposed to be, they may move you on, they may arrest you or in some cases, people have been escorted to the airport and told to get the next plane home. Part of the reason for this is illegal immigrants arrive there and try to sleep wild. There are out of the way areas but many have houses near them who might report you or are inhospitable places.
I don't know about gas. This may be helpful:
Only Camping Gaz bottles can now be exchanged at the Texaco station. Other types of containers must be taken to the DISA station out of town (Don Pedro at the Texaco station will advise how to get there). Bottles are normally refilled with butane, but if there is sufficient demand, the plant will provide propane.

You can eat out fairly cheap on Gran Canary.
If the original poster is asking about the availability of small camping gas canisters rather than re-fillable ones, I bought a small for my camping cooker so that I had a better chance of picking up cooking fuel when I got off the plane in Europe. It gives me the choice between 'screw fit' and 'bayonet fit' canisters. Don't know if either of these are sold on Gran Canaria. Would like to know, as I was thinking similar stuff - maybe sleeping on a quiet part of a beach somewhere after taking advantage of a cheap flights over the winter.

Thanks very much for the advice. Sounds like wild camping may be a bit risky then. Such a shame they don't have any campsites open during the Winter months. By all accounts there are camping spots available but you need to apply for a permit several days in advance which is only given once proof is shown that you're a Spanish resident.
Thanks for the info on the gas, but that sounds like a facility for filling the large gas bottles. I was after the small 250ml cartridges for small back-packing stoves, but thank you anyway.
