You should definitely check out the Dolomites, the eastern alpine massif. is a fairly decent English language guidebook for the region.
If you are really into hiking consider doing one of the long-distance hikes in Europe. The St. James Way is probably the most famous of the long-distance hikes.
Germany also has some great hiking, see

A very thorough webpage on trekking routes in Spain is Topwalks. It has 235 walks in the provinces of Asturias, Cantabria, Leon, Huesca, Castellon, Valencia, Alicante, Jaen, Granada, Almeria, Cadiz and Malaga, all with detailed descriptions, maps, GPS waypoints, slide shows and photos.
In my opinion, the most spectacular routes are in the north of Spain, Pyrenees and the Picos de Europa.
Thank you so much for all the useful advise and on the way i go plotting the trip :-)
You can Google "Camino de Santiago", for loads of information on a great hike across Europe and the North of Spain to Santiago de Compostela (Spain). Also Amawalker.blogspot is a great enthousiast of hiking across the European continent.
