Option 3 sounds the best to me, it's getting late in the season and northern Australia will be quite humid and stinger season from December through to February or March. Also this way while you're travelling if you find any decent jobs you can stop and work instead of having to find work when you get to Sydney. My 2nd choice would be option 1 for the same reasons as above. Either way you'll have a great time, enjoy.
If you really want to get yourself to Cairns I would do it right away. I have found when travelling that sometimes it is a tad difficult to get moving once you get settled. That is just me.
However, after recently seeing the National Geographic TV series about Queensland my opinion might be a bit bias. I saw that footage and would love to go straight to the Whitsundays.
If it was me, I would not even go to cairnes at all at that time. Australia is extremely hot in summer as it is, and cairnes in summer is unbarable. You really need to go there around July
