Although can I get back into Thailand for 15 days after I have been to Vietnam if my plan is to get a train to malaysia??

No problem getting a train starting in Bangkok that will take you to Malaysia and on to Singapore. I have done it. If you need a sleeper car get that request in as soon as you arrive in Bangkok. Trains can be a little cold at times so have a light jacket or long sleeve shirt.
With a UK passport entering Thailand by air you will get 30 days free at the airport. (You get a stamp in your passport allowing you to stay in Thailand for 30 days, no prior visa required.) Enter Thailand by land from any nearby country you only get 15 days entry stamp in your passport, if you are using the right passport.

Don't leave Vietnam with their money, no one wants it after you leave the country. US dollars are used often in Vietnam as a de facto currency but shouldn't be a problem changing UK pounds to dong.

You'll easily get through two months in Vietnam and Cambodia and wish you had more. If you over stay in Thailand its not a big deal, they are more than happy to take your money when you leave for the over stay and paying it is a simple process. i over stayed a week. Ive heard if you get the right person you might not have to pay, but don't count on it.
