Get yourself up to Touffrine, on a minor pass between Demnate and Skoura.
It's way off the track, there are excellent, cheap guides (ask for Mohammed el Mady at Touffrine), and there's unrivalled friendliness. I think it's also the most beautiful area. It's not too high, so won't be ice bound like Toubkal and the other higher peaks, but it will be cold at night and Berbers don't often heat their houses (or gîtes) at night.

Not sure if you were also trying to get cheaper flights to Morocco.
There are quite a few budget flights to places in Morocco, mostly Nador, Tanger, Fez and Marrakech, less so to Casablanca though. See you are from Malta, you might try and fly into southern Spain and get the ferry to Tanger. That is, if you want to visit some places in the north as well.

how are you doing? i wish things are going pretty well over there.
well; welcome to Morocco and i wish you a very enjoyable and safe trekking, hiking and enjoyable trip. hiking within the winter time in Morocco will be great in low places as higher parts will be covered with snow; Toubkal region won't be a good place as the snow exist even in February. i do suggest hiking in Ait Bougoumez valley as it's a wonderful place to hike in and mainly that it's not too high from the sea level, you can also try hiking in Middle Atlas region nearby Ain Louh and Khénifra as it's a beautiful place too.
don't forget to bring your sleeping bag and good shoes as well.
about flights; it'll be great to get a flight to Spain and get a Ryanair flight to Morocco as there're cheap flights to Fes & Marrakesh or get a ferry from Tarifa or Algezires to Tanger and visit Chefchaouan on your way as it's a beautiful blue city.
