The first time I did something like this my route was:

Heathrow -> LA
LA -> Rarotonga (Cook Islands)
Rarotonga -> Auckland
Auckland -> Sydney
Sydney -> Singapore
Singapore -> Heathrow

I'd highly recommend going somewhere like Rarotonga instead of Fiji. I also regret not spending any time in NZ, I literally just stopped off en route to Aus.

I'm something similar later this year, this time doing things a bit differently. My itinerary this time is:

Heathrow -> NY (then getting a Greyhound bus from NY to Toronto)
Toronto -> San Diego (getting another bus from SD to LA)
LA -> Tahiti
Tahiti -> Auckland
Christchurch -> Brisbane
Cairns -> Hong Kong.

Again, I've decided to go for somewhere a bit different in the South Pacific (although I hear Tahiti is very expensive, so Samoa might be a better bet). When it comes to NZ/Aus, I'd highly recommend flying in to one city and out of another.
The first time I went to Aus, by flying in and out of Sydney, I was restricted to where I could go (the Blue Mountains was the furthest I ventured).
This time I'm flying in to Brisbane and out of Cairns, so I can explore the east coast without having to worry about getting back to my original destination.
Likewise, in NZ I'm going to Auckland and making my way to C'Church (I'm using Magic Bus but there are loads of ways of doing it), meaning I can see a lot more of the country.

As for flights, booking in advance will save you money, but obviously restricts your flexibility. I paid around £1,500 for all my flights. I priced them all up individually online and it came to nearly £4k. All depends how you want to do it.
