I'm sure there was a discussion somewhat recently about amaysim (fairly cheap and good for data was the summary, I believe) but I can't find the thread now.

I brought my iPhone 4 unlocked and went with Telstra, which has coverage all over Australia. Got a pay as you go sim card that you can top up online once you make an account. Has a few different plan options depending on what you want

In New Zealand you can get a 2 Degrees SIM card for free in the bus from the airport to the city (and probably other places too). Then you just have to pay for topping-up which you can do on-line or by text.
