We did a small section of this - from Cancun to Valladlid for Chichen Itza, then to Tulum and then on to Chetumel for Belize - in December. We found a reasonable hostel in Valladolid, Candelaria, but wanted to stay on the beach in Tulum when cheaper and better hostels are located in the town. For transport, we found that ADO buses were excellent - not the cheapest but timely, clean, comfortable and safe.

I just can give you indications about the road with great sites including a section in Guatemala (one month in total)
Mexico-city and Tehotihuacan ==> Oaxaca with the Zapoteque site of MonteAlban ==> Canyon El Sumidero ==> San Cristobal de la Casas in Chiapas ==> Palenque & Agua Azul waterfalls ==> Atitlan lake in Guatemala ==> Antigua in Guatemala ==> Copan, Honduras ==> Quiriga & Rio Dulce in Guatemala ==> Tikal ==> crossing Belize ==> Merida, Uxmal & Chichen Itza in Yucatan ==> Tulum, and back in Europe from Cancun

Borisborough, yeah I've heard of ADO buses and how good they are. It's something I have in mind to use when traveling through some regions which are not very safe.
Alain 13, sounds like an interesting route. How did you cross from Palenque to Guatemala? On google map I don't see a road from Western and Northern side of Mexico to Guatemala, only from Eastern and Southern.

From Palenque I went back to San Cristobal, then east, crossing the border at Ciudad Cuauhtemoc.
