This site is good for UK travellers

This site explains the Thailand rules for an EXEMPTION of a visa, as opposed to an actual visa which is on another page.
They do not require a return ticket to the UK, Just out of Thailand.

Myanmar do not say anything about onward travel that I can see but. I got a visa the other day and there was no request of an itinerary even, let alone an onward ticket, but I would be prepared for the question on entering the country. There is a note on the Application that Visa on arrival is not available so look into getting one before you go but within 3 months of arriving there.

You titled your post correctly in that counties are looking for onward travel not return travel to you country of origin. Therefore all you need to do is show onward travel out of Thailand if they should ask. It's been my experience that the immigration don't ask but the airlines often do and will refuse to let you on board for your flight until you can show onward travel. Since you are going to Burma next and the flights are cheaper the earlier you buy them, I'd suggest you buy your Burma return tickets now. This gives you your onward proof for Thailand and also for Burma which is definitely required. Good luck and happy travels.
