I have an opportunity to go to Europe in early June for 9 days (Fly out on the 10th day). But I'm leaving from Iceland (If it matters, I'm American) so only have the choice of a few destinations.

Ignoring costs for the moment, what are your thoughts on the logistics of London > Paris > Amsterdam > Copenhagen via train? (fly into London and out of Copenhagen) (night train from Amsterdam to Copenhagen)
That would be one full day in each city plus one extra full day.
Or if that is too much, I could just cut out Amsterdam.

I would prefer to try to move around in this time frame to see as much as possible.
This is the problem, many people think that as much as possible equal to as many as possible.
Take a break and try to think of the practicalities of moving around too much, not only the transit time, but the time spent on packing your stuff, checking out of hotel, getting to nearest airport or tain station, waiting time there, traveling, arriving to next destination, getting to hotel, checking in, unpack, get oriented... Even if actual transit time is a couple of hours, a good part of the day is lost every time you change locations. You need a lot of time to commute among spots of interest within the cities their selves too.
Places such as Paris or London are huge metropolitan areas with tons to see, do and experience. Visiting a site or two or joining one activity doesn't mean you get any decent idea of the place. One day comes to nothing!
Personaly I would pick one or at most two cities easily connected and enjoy.
I like the London Paris Amsterdam Copenhagen route. But then I travel quick. Be sure to be in Copenhagen for an evening - Tivoli gardens much more atmospheric by night.
If you try to do this with such limited time, research what you want to see so you maximize the use of your time.
Out of those I would try to get more time in London and less in Amsterdam.

You should look at Interrailing as a method of transport, you can get some really cheap deals online and can choose how many countries you want to visit in however many days you may choose
I would personally go with Berlin to Warsaw to Krakow. Or just Berlin to Krakow. If you're interested in history, those are going to be some of your most history-rich and easy to navigate cities. The historical elements are clearly visible in these cities - from Charlie's Checkpoint & the remnants of the Berlin wall, to Hero's square and the fact that Warsaw is so new compared to it's history as a result of rebuilding. They'll also be cheaper!
I agree with other posters - if you try to cram too much into a short period of time it will feel too rushed and the logistics will be a pain. They changed the trains between the two cities, but are reintroducing a direct bus this spring from what I've heard for about 29 euros, so that's not too bad. Otherwise, berlin to Warsaw on the bus is only 19 euros. If you have carry-on only luggage you could also look at budget airlines to get between cities - but be sure to consider time and cost of getting to & from airports when you're looking at these costs and comparing.
