I would contact your Thai Embassy and buy the tourist visa. Or a multiple entry if that fits your plans better. You can extend the 60 day visa to 90 days once there. Yes, it does state that you must have an onward airline ticket to enter Thailand legally. But in reality, the Thai Immigration officials rarely ask to see it. I have entered Thailand 14 times and never was asked for onward documents. Buy your tourist visa and enjoy your time in Thailand. I would not stress over the onward flight requirement. Good luck with your planning.
